This week I cracked and have been on a cooking frenzy. On Thursday evening I got together with Beetlegirl to make Martha Stewart chocolate cupcakes with orange zest buttercream for a friend's 30th Birthday. Last night I made one of the most labor-intensive meals I've made so far: Lamb and Eggplant Shepard's pie from Bon Appetit Magazine.
and then used the absolute reminder to try my hand at buttermilk pancakes. I started making my own pancake batter when I ran out of the pre-made stuff, googled a recipe and discovered it was as easy as the packaged variety and tasted better.
Like I said, my pent up baking instincts exploded. L is a very lucky man.
In other news, I landed wrong out of a jump in jazz class and sprained my ankle. I've been RICEing all weekend and the swelling has finally gone down. This is the 2nd time I've hurt it this year. L pointed out that now that I'm dancing 5 days in a row, I'm not really giving myself time to recover in between classes and maybe, just maybe, I shouldn't be doing all the jumping every day. *sigh* As much as I hate to admit it, he's probably right. So I'm back to rehabing it, no jumps until it's better, and then I'm going to pick 3 days a week to jump and do abs through the jumping parts on the other days.
Well, at least it will force you to do abs. It's kind of like when it snowed on the east coast and I'd go to the pool to swim in warm water.
